  • salt and pepper to taste - 1 item
  • can tomato paste - 1 item
  • onion, diced - 1 item
  • olive oil - 3 Tbsp
  • green pepper, diced - 1 item
  • red wine - 1/2 c
  • garlic - 2 Tbsp
  • red pepper, diced - 1 item
  • zucchini, diced - 1 item
  • yellow squash, diced - 1 item
  • chopped oregano - 1 Tbsp
  • eggplant, diced - 1 item

How to make ratatouille:

Saute all vegetables in oil until soft. Add garlic; cook 5 more minutes. Deglaze with red wine. Add tomato paste; reduce heat to low. Cook until vegetables are very soft. Stir in fresh oregano, salt and pepper.
