Ingredients/Components
- salt and pepper to taste - 1 item
- can tomato paste - 1 item
- onion, diced - 1 item
- olive oil - 3 Tbsp
- green pepper, diced - 1 item
- red wine - 1/2 c
- garlic - 2 Tbsp
- red pepper, diced - 1 item
- zucchini, diced - 1 item
- yellow squash, diced - 1 item
- chopped oregano - 1 Tbsp
- eggplant, diced - 1 item
How to make ratatouille:
Saute all vegetables in oil until soft. Add garlic; cook 5 more minutes. Deglaze with red wine. Add tomato paste; reduce heat to low. Cook until vegetables are very soft. Stir in fresh oregano, salt and pepper.Recipe categories: Eggs/dairy, Cheese, Main dish.
