Ingredients/Components

  • pkg - 1 oz
  • sour cream - 1 c
  • melted margarine - 1/2 c
  • shredded carrots - 1 c
  • chopped onion - 1/4 c
  • can cream of chicken soup - 1 item
  • summer squash about 6 c - 2 lb

How to make summer squash casserole:

Simmer the squash and drain. Add the onion, soup, carrots and sour cream. Mix the stuffing with the melted margarine. Place most of the stuffing mix in the bottom of a 13 x 9-inch pan. Spread with rest of ingredients mixed together. Spread rest of stuffing mix over top. Bake at 350° for 25 minutes.

Two cups of cubed chicken or ham may be added to make a complete meal.
