  • sour cream - 1 c
  • shredded carrots - 1 c
  • chopped onion - 1/2 c
  • can cream of chicken soup - 1 item
  • stick melted butter - 1 item
  • thinly sliced squash - 7 c
  • bag herb seasoned dressing mix stuffing - 8 oz

How to make summer squash casserole:

Cook squash and onion in boiling salted water for 5 minutes; drain. Combine soup, sour cream and carrots with squash and onion mixture. Melt butter. Stir in stuffing mix. Put 1/2 stuffing mix on bottom of dish, then all of vegetable mixture. Top with remaining stuffing mix. Bake at 350° for 25 minutes.
