  • water - 1 c
  • garlic salt - 3 Tbsp
  • ground beef - 5 lb
  • crushed red pepper - 2 tsp
  • liquid smoke - 1 Tbsp
  • mustard seed
  • cracked peppercorns - 3 tsp
  • Tender Quick salt - 5 Tbsp
  • hickory smoke salt - 1 tsp

How to make summer sausage:

Can use venison or pork instead of ground beef. I use less salt.

Mix all together thoroughly, then refrigerate. Repeat, mixing once each day for 3 days. On the fourth day, shape into rolls approximately 2 x 6-inches. Put on broiler pan and bake at 150° for 10 hours, turning once halfway through cooking time. Wrap in foil and keep in refrigerator. May be frozen for future use.
