  • water - 1 c
  • garlic salt - 1/4 tsp
  • ground beef - 2 lb
  • liquid smoke - 2 tsp
  • mustard seed - 1/2 tsp
  • whole black pepper - 1 Tbsp
  • onion powder or salt - 1/4 tsp
  • Morton Tender Care Quick cure salt - 3 Tbsp

How to make summer sausage:

Mix all ingredients in large bowl, then make loaves and wrap in aluminum foil. Put shiny side of foil to the meat. Refrigerate for 24 hours. Next day, poke hole in bottom of foil with toothpick. Place in rack or broiler pan over 1/2 inch of water. Bake at 325° for 90 minutes. Let cool before refrigerating.

Good for Christmas holidays, etc. Serve on crackers of any kind with different mustards or cheeses.
