Ingredients/Components
- granulated sugar - 1/2 c
- vanilla extract - 2 tsp
- salt - 1/8 tsp
- plus 1 Tbsp
- unsalted margarine, softened - 1/2 c
- large egg, at room temperature - 1 item
- reduced calorie margarine, softened - 1/4 c
How to make sugar cookies:
In large mixer bowl, at medium-high speed, beat margarines until creamy. Gradually beat in sugar until light and fluffy. Add egg, vanilla and salt; beat until blended. On low speed, a little at a time, mix in all but 1 tablespoon of the flour until just combined. Divide dough into 4 equal parts and wrap each piece in plastic wrap. Place in freezer 1 hour or in refrigerator 2 to 3 hours or until well chilled. Preheat oven to 375°.Working with one piece at a time (keep others chilled), roll out dough 1/4-inch thick between 2 sheets of wax paper. With reserved 1 tablespoon flour, flour 2 1/2-inch cutters. Cut dough into desired shapes. With a thin spatula, lift cookies from wax paper onto ungreased baking sheets; re-roll and cut scraps. Bake cookies 6 to 8 minutes or until lightly browned. Let cool on wire racks. Makes 30 cookies, 15 servings of 2 cookies each.
Each serving provides 1 bread exchange, 2 fat exchange and 35 optional calories. Per serving: 185 calories, 3 grams protein, 8 grams fat, 25 grams carbohydrates and 60 milligrams sodium.
