Ingredients/Components

  • butter - 1 Tbsp
  • garlic salt - 1/2 tsp
  • chopped onions - 3 Tbsp
  • chopped tomato - 1/4 c
  • dry bread crumbs - 3 Tbsp
  • medium zucchini - 3 item
  • water chestnuts, sliced - 1/2 c
  • slices cheese, diced - 4 item

How to make stuffed zucchini:

Parboil zucchini 5 to 8 minutes. Drain and cut in half lengthways. Hollow out, leaving 1/4-inch shell. Chop centers. Melt butter, then combine cheese, chestnuts, bread crumbs, garlic, tomato and zucchini centers. Cook filling until cheese starts to melt. Fill hollow zucchini. Bake in 350° oven for 25 to 30 minutes.
