Zucchini pickles
Ingredients/Components
- celery salt - 1 tsp
- small onions - 2 item
- mustard seed - 2 tsp
- cups sugar - 2 item
- cups cider vinegar - 3 item
- tumeric - 1 tsp
- fresh, firm zucchini - 2 lbs
- cup salt pickling salt is best - 1/4 item
How to make zucchini pickles:
Wash zucchini and cut into thin slices. Peel and cut onions into quarters and then slice very thin. Add to water and add salt. Let stand for 2 hours. Drain throughly. Bring remaining ingredients to a boil. Pour over zucchini and onions. Let stand for 2 hours. Bring all ingredients to a boil for 5 minutes.Pack into pre-heated jars, leaving 1/4 inch head space. Adjust caps and process in water bath. (cover jars with water) Canner at simmering temperature for 15 minutes. Test for seal and store
