Stuffed eggplant
Ingredients/Components
- eggs - 3 item
- salt - 1 Tbsp
- water - 1 c
- pepper - 1/8 tsp
- bread crumbs - 1/2 c
- basil - 1/4 tsp
- can tomato paste - 1 oz
- olive oil - 9 Tbsp
- Mozzarella cheese - 1 lb
- Parmesan cheese, grated - 1/2 c
- small onions, chopped - 2 item
- eggplant - 3 item
How to make stuffed eggplant:
Slice eggplant in half and scoop out meat. Saute onions in 2 tablespoons olive oil. Add meat of eggplant plus all other ingredients. Add flour to thicken to proper consistency.
