- flour - 1 item
- egg - 1 item
- leftover mashed potatoes - 1 qt
- bacon drippings - 1 item
- green onion tops, diced fine - 1/2 c
How to make potato cakes:
Using leftover mashed potatoes, add egg and green onion tops. Mix well. Shape into biscuit-sized cakes, roll in flour and fry to golden brown in bacon drippings.Recipe categories: Side dish, Potato, Vegetables.
