Ingredients/Components
- salt - 1/4 tsp
- flour - 1/4 c
- baking powder - 1/2 tsp
- egg, beaten - 1 item
- pepper - 1/2 tsp
- medium onion - 1 item
- corn bread mix - 1/2 c
- yellow squash, sliced thin - 1 lb
- peanut oil for frying - 1 item
How to make squash fritters:
Cook squash for 10 minutes; drain and mash. Add beaten egg and onion to squash. Sift all dry ingredients together. Mix with the squash mixture. Drop by spoonfuls into hot oil. Cook until golden brown, turning once.Recipe categories: Eggs/dairy, Squash, Side dish.
