Squash casserole
Ingredients/Components
- sour cream - 1 c
- margarine - 1 Tbsp
- can cream of mushroom soup - 1 oz
- pepper to taste - 1 item
- onion, chopped - 1 item
- salt to taste - 1 item
- carrots, grated - 2 item
- vegetable cooking spray - 1 item
- yellow squash 3 c - 2 lb
- herb stuffing, divided - 2 c
How to make squash casserole:
Slice squash. Place in large pot of water; cook squash until tender. Drain and mash. In large bowl, combine squash, sour cream, carrots, onion, soup, salt and pepper. Mix thoroughly. Spray a 3-quart casserole dish with vegetable spray. Sprinkle 1 cup of stuffing on bottom of casserole dish. Pour squash mixture over stuffing. Top mixture with 1 cup stuffing. Dot with margarine.
