Ingredients/Components

  • sour cream - 1 c
  • margarine - 1 Tbsp
  • can cream of mushroom soup - 1 oz
  • pepper to taste - 1 item
  • onion, chopped - 1 item
  • salt to taste - 1 item
  • carrots, grated - 2 item
  • vegetable cooking spray - 1 item
  • yellow squash 3 c - 2 lb
  • herb stuffing, divided - 2 c

How to make squash casserole:

Slice squash. Place in large pot of water; cook squash until tender. Drain and mash. In large bowl, combine squash, sour cream, carrots, onion, soup, salt and pepper. Mix thoroughly. Spray a 3-quart casserole dish with vegetable spray. Sprinkle 1 cup of stuffing on bottom of casserole dish. Pour squash mixture over stuffing. Top mixture with 1 cup stuffing. Dot with margarine. Bake at 350° for 40 minutes.
