Ingredients/Components

  • flour - 2 Tbsp
  • butter - 4 Tbsp
  • evaporated milk - 1/2 c
  • Worcestershire sauce - 1 tsp
  • garlic salt - 3/4 tsp
  • onion, chopped - 2 Tbsp
  • salt to taste - 1 item
  • black pepper - 1/2 tsp
  • celery salt - 3/4 tsp
  • red pepper to taste - 1 item
  • frozen chopped spinach - 2 pkg
  • roll jalapeno cheese - 6 oz

How to make spinach madeline:

Cook spinach according to directions on package. Drain and reserve liquid. Melt butter in saucepan over low heat; add flour and stir until blended and smooth but not brown. Add onion and cook until soft but not brown. Add milk and 1/2 cup spinach liquid slowly stirring constantly to avoid lumps. Cook until smooth and thick. Continue stirring. Add seasonings and cheese which has been cut into small pieces. Stir until melted and combine with cooked spinach. This may be served immediately or put into casserole and topped with buttered bread crumbs. Can be frozen and reheated. Serves 5 to 6.
