  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • butter - 4 Tbsp
  • evaporated milk - 1/2 c
  • Worcestershire sauce - 1 tsp
  • garlic salt - 3/4 tsp
  • chopped onion - 2 Tbsp
  • black pepper - 1/2 tsp
  • celery salt - 3/4 tsp
  • red pepper to taste - 1 item
  • frozen chopped spinach - 2 pkg
  • roll jalapeno cheese - 1 (6
  • spinach liquid - 1/2 c

How to make spinach madeleine:

Cook spinach according to package directions. Drain and reserve liquid. Melt butter in saucepan; add onion and cook until tender. Add flour and stir until smooth. Stir in vegetable liquor and milk slowly, stirring constantly and cook until thick.

Continue stirring while adding seasonings and cheese (which has been cut into small pieces). Stir until melted. Combine with cooked spinach. Place in a buttered 1 1/2 quart casserole. Flavor is improved if kept in refrigerator overnight before cooking. Bake at 350° for 30 minutes or until heated throughout. Serves 4 to 5.
