Ingredients/Components

  • sugar - 2 tbsp
  • salt - 1/2 tsp
  • flour - 2 c
  • butter - 1/2 c
  • egg, slightly beaten - 1 item
  • baking powder - 2 tsp
  • butter, melted - 1/4 c
  • orange juice - 3/4 c
  • chopped fresh or frozen cranberries - 1 c

How to make sparkling cranberry muffins:

Heat oven to 400°. In small bowl combine cranberries and 2 tbsp. sugar. In large bowl stir together flour, 1/3 c. sugar, baking powder and salt. Cut in butter until mixture is crumbly. Stir in juice and egg until just moist. Gently stir in cranberry mixture. Spoon batter into greased muffin tins. Bake for 20-25 minutes, until golden. Cool 5 minutes, remove from tins.

Dip each top in 1/4 c. melted butter, then in 1/4 c. sugar.
