  • dried apricots 8 oz - 1 c
  • orange juice - 3/4 c
  • salt - 1 tsp
  • flour - 2 c
  • sugar - 1 c
  • soda - 1/2 tsp
  • butter - 1/4 c
  • baking powder - 2 tsp
  • eggs - 2 item
  • nuts, chopped - 1 c

How to make apricot nut bread:

Cut apricots; add to orange juice (let stand 30 minutes). Sift together dry ingredients. Cream butter, sugar and eggs; beat. Blend in apricots and juice. Stir in flour mixture. Mix until smooth. Add nuts.

Divide batter into 3 (5 x 3-inch) or 2 (9 x 5-inch) well-greased loaf pans. Bake at 350° for 40 minutes.

Best when kept for a few days before serving. Good toasted and buttered.
