Sour cream chicken enchiladas
Ingredients/Components
- sour cream
- flour - 2 Tbsp
- margarine - 1/3 c
- chili powder - 1 item
- chicken broth - 2 c
- large onion, chopped - 1 item
- jalapenos - 1 item
- chicken breasts, cooked and shredded - 1 pkg
- grated Monterey Jack cheese reserve 1 c - 1 lb
- to 16 corn tortillas - 14 item
How to make sour cream chicken enchiladas:
Sauce: Blend margarine, flour and chicken broth over medium heat. Add sour cream and blend until thoroughly warm. Do not boil.Mix cheese, onions and cooked chicken together. Add chili powder and jalapenos (chopped) to taste. (For more zest, add some juice from jalapenos.) Fill softened tortillas with chicken mixture and place in a large baking pan. Pour sauce over enchiladas. Sprinkle with remaining cheese and jalapenos. Bake at 350° for 20 minutes.
