  • frozen orange juice concentrate - 2 Tbsp
  • salt - 1 tsp
  • pepper - 1/2 tsp
  • water - 2 c
  • catsup - 1/2 c
  • soy sauce - 2 Tbsp
  • brown sugar - 2 Tbsp
  • dry mustard - 1 tsp
  • garlic salt - 1/2 tsp
  • ground ginger - 1/2 tsp
  • can mandarin oranges, drained - 1 oz
  • pitted ripe olives, quartered - 1/2 c
  • chopped green pepper - 2 Tbsp
  • cornstarch - 3 Tbsp

How to make slow cooker chicken:

The night before or early in the morning, combine frozen orange juice concentrate, salt and pepper with 1 cup of the water, the catsup, soy sauce, brown sugar, mustard, garlic salt and ginger. Mix well and pour into a large bowl.

Skin and defat the chicken; add to bowl. Marinate for 2 hours or overnight in refrigerator. Transfer mixture to slow cooker. Set heat on low. Cover and cook for 6 to 8 hours. About 1 hour before serving, set heat on high. Add oranges, olives and green pepper. Combine cornstarch with remaining cup of water and add. Cook, stirring constantly, until sauce is bubbly and slightly thickened and green pepper is cooked, but still crisp.
