Scalloped potatoes
Ingredients/Components
- milk - 1 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- margarine - 1 Tbsp
- pepper - 1/8 tsp
- medium onion, finely chopped - 1 item
- each - 4 potatoes,
- small green pepper, thinly sliced - 1 item
- Cheddar cheese, shredded 1 1/2 c - 6 oz
How to make scalloped potatoes:
Microwave Directions: In a shallow 1 1/2-quart casserole, cook potatoes in 2 tablespoons of water, covered, on High for 11 to 13 minutes until tender. Turn potatoes halfway through cooking.In a 1-quart glass measure, cook onion, pepper and margarine, covered, on High 4 to 6 minutes until tender, stirring once. Stir in flour, then milk, salt and pepper. Cook on High 3 to 5 minutes until mixture boils and thickens, stirring once. Stir in 3/4 cup of cheese.
Meanwhile, slice potatoes 1/4-inch thick. In same 1 1/2-quart casserole, layer potato slices and cheese sauce. Sprinkle with remaining 3/4 cup cheese. Cook on High for 4 to 6 minutes until cheese melts. Makes 8 servings.
