  • large can sauerkraut, drained - 1 item
  • cream cheese - 1 (8
  • small onion, chopped - 1 item
  • sausage mild or hot - 1 lb
  • parsley - 2 Tbsp
  • mustard - 2 tsp
  • pepper - 1/4 tsp
  • salt - 1/2 tsp
  • bread crumbs * - 1 item
  • eggs, beaten * - 3 item
  • flour * - 1 item

How to make sauerkraut balls:

*You will use these items to dip balls in before cooking.

Brown sausage and onion, then drain off grease. Mix with a mixer the remaining ingredients (except bread crumbs, eggs and flour). Add sausage and onion; mix well. Chill overnight. Make sure this is covered tightly as the sauerkraut has a strong smell!

Remove mixture from refrigerator and shape into 1-inch balls. Dip each ball in the following. First, dip in flour, second, in egg and third, in bread crumbs. Fry in hot oil until brown. Drain on paper towels. Serve while warm with hot mustard.
