Ingredients/Components

  • salt - 1 tsp
  • chopped onion - 1 c
  • ground cumin - 1/2 1
  • cayenne - 1/4 1/2
  • large ripe tomatoes, diced - 5 item
  • large garlic cloves, crushed - 3 item
  • dry sherry optional - 2 4
  • chopped green chilies, canned - 1/2 c
  • minced parsley, basil and chives to taste - 1 item

How to make salsa roja:

Combine all ingredients except parsley, basil and chives in a saucepan. Bring to a boil, lower the heat and cover. Simmer for 40 to 50 minutes. Add minced herbs to taste.
