Ingredients/Components

  • salt - 1/2 tsp
  • vegetable oil - 2 Tbsp
  • chopped onion - 1 c
  • chili powder - 1 tsp
  • chopped green pepper - 1 c
  • ground cumin - 1 tsp
  • garlic cloves, minced - 2 item
  • chicken, cut up - 1 item
  • cans stewed tomatoes - 2 1/2
  • can pinto beans, drained - 1 oz
  • mild or medium picante sauce - 3/4 c
  • shredded Cheddar cheese, diced avocado and sour cream optional toppings - 1 item

How to make chicken chili:

In a Dutch oven, boil chicken 30 to 45 minutes. Remove chicken. Bone and cube. In Dutch oven, heat oil on medium. Saute onion, green pepper and garlic until tender. Add chicken, tomatoes, beans, picante sauce and seasonings; bring to boil. Reduce heat; simmer for 20 minutes. Ladle into soup bowls. Top with cheese, avocado and sour cream, if desired.
