  • eggs - 2 item
  • milk - 1 c
  • salt - 1/4 tsp
  • flour - 2 Tbsp
  • butter
  • lemon juice - 1 Tbsp
  • pepper - 1/8 tsp
  • chopped parsley - 1 Tbsp
  • marjoram - 1/4 tsp
  • tarragon - 1/4 tsp
  • can salmon - 1 lb

How to make salmon souffle:

White Sauce:2 Tbsp. butter2 Tbsp. flour1/8 tsp. pepper1/4 tsp. salt1 c. milk In a saucepan, melt butter. Blend in flour, salt, pepper and milk. Stir until thick. Pour gradually over beaten egg yolks. Let cool. Add spices and lemon juice to the salmon. Next, combine with the white sauce and fold in stiffly beaten egg whites. Pour into a buttered baking dish and bake for 30 minutes at 325°, then for 15 minutes at 350°.
