  • eggs - 2 item
  • milk - 1 c
  • salt - 1/4 tsp
  • flour - 2 Tbsp
  • butter
  • lemon juice - 1 Tbsp
  • pepper - 1/4 tsp
  • parsley, chopped - 1 Tbsp
  • onion, chopped fine - 1 Tbsp
  • can salmon - 1 lb

How to make salmon souffle:

White Sauce:2 Tbsp. butter1/4 tsp. salt1/4 tsp. pepper2 Tbsp. flour1 c. milk Melt butter and blend with flour. Add milk and stir until thick. Cool. Add parsley, onion and lemon juice to salmon, then combine with white sauce and fold into stiffly beaten egg whites. Pour into buttered baking dish and bake 30 minutes at 325°, then bake 15 minutes at 350°. Serves 4 to 6 people.
