Ingredients/Components

  • pkg - 1/2 lb
  • lemon juice - 2 Tbsp
  • clove garlic, minced - 1 item
  • dash of ground ginger - 1 item
  • soy sauce - 1 Tbsp
  • cashews - 1/3 c
  • peanut oil - 1/2 c
  • fresh snow peas - 1/4 lb
  • red and yellow bell peppers - 1 c
  • small red onion, cut in wedges - 1/2 item

How to make rotini salad:

Prepare rotini as package directs. Drain well. Add next 5 ingredients in small bowl. Blend oil, lemon juice, soy sauce, garlic and ginger. Toss with rotini mixture. Chill. Garnish. Serves 4 to 6.
