Ingredients/Components
- stick margarine - 1/2 item
- Velveeta cheese - 1 lb
- large onion, chopped - 1 item
- large green pepper, chopped - 1 item
- can Ro-Tel tomatoes, diced - 1 item
- small can mushrooms, sliced and drained - 1 item
- to 8 potatoes, boiled in jackets - 7 item
How to make rotel potatoes:
Quarter potatoes and place in large baking dish. Saute onion, pepper and mushrooms in margarine. Mix tomatoes and melted cheese with onion mixture. Pour over potatoes. Heat at 350° until cheese bubbles.Recipe categories: Side dish, Potato, Vegetables.
