Ingredients/Components

  • stick margarine - 1/2 item
  • Velveeta cheese - 1 lb
  • large onion, chopped - 1 item
  • large green pepper, chopped - 1 item
  • can Ro-Tel tomatoes, diced - 1 item
  • small can mushrooms, sliced and drained - 1 item
  • to 8 potatoes, boiled in jackets - 7 item

How to make rotel potatoes:

Quarter potatoes and place in large baking dish. Saute onion, pepper and mushrooms in margarine. Mix tomatoes and melted cheese with onion mixture. Pour over potatoes. Heat at 350° until cheese bubbles.
