Ingredients/Components

  • sugar - 1/4 c
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • flour - 2 c
  • brown sugar
  • butter - 1/2 c
  • soda - 1 tsp
  • baking powder - 1 tsp
  • powdered sugar - 2 c
  • buttermilk or sour milk - 1 c
  • beaten egg - 1 item
  • egg white, stiffly beaten - 1 item
  • Mix together with other ingredients

How to make rhubarb cake:

Cream sugars and butter well. Mix together with other ingredients. Put 1/2 batter in pan. Sprinkle 2 cups sliced rhubarb (raw) on top. Cover with remaining batter. Sprinkle with a mixture of 1/2 cup sugar and 1 teaspoon cinnamon on top. Bake at 350° for 45 minutes.Frosting:1/2 c. butter1 egg white, stiffly beaten1 tsp. vanilla2 c. powdered sugar Sprinkle nuts on top.
