Ingredients/Components
- sugar
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/3 c
- flour
- brown sugar
- butter - 2 Tbsp
- evaporated milk - 1/2 c
- soda - 1 tsp
- baking powder - 1 tsp
- shortening - 3/4 c
- powdered sugar - 2 c
- dash of salt - 1 item
- buttermilk or sour milk - 2/3 c
- mashed banana - 3/4 c
- Frosting:1 egg white
How to make banana nut cake:
Creamy Nut Filling:1/2 c. brown sugar2 Tbsp. flour2 Tbsp. butter1/2 c. evaporated milk1/3 c. chopped nuts dash of salt1 tsp. vanilla Frosting:1 egg white1/4 c. butter1 tsp. vanilla1/2 c. shortening2 c. powdered sugar1/2 c. chopped nuts Cake: Cream shortening and sugar; add egg, vanilla and beat in mashed banana. Mix flour, baking powder and soda. Mix alternately with buttermilk. Add chopped nuts, if desired. Bake at 375° for 25 minutes in two (8 to 9-inch) greased and floured pans. Cool and spread chilled filling between layers.Filling: Cook brown sugar, flour, butter and evaporated milk until thick and bubbly. Add nuts, salt and vanilla. Chill.
Frosting: Beat together egg white, butter, vanilla and shortening. Add powdered sugar and chopped nuts.
