  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour
  • brown sugar
  • soda - 1 tsp
  • buttermilk - 1 c
  • vegetable oil - 2/3 c
  • egg - 1 item
  • nuts - 1/2 c
  • cut up rhubarb

How to make rhubarb bread:

Blend brown sugar and oil until smooth. Add egg, buttermilk and vanilla, then add dry ingredients. Fold in rhubarb and nuts. Pour into 1 large or 2 small pans, greased and floured. Bake at 325° for 1 hour.

Topping: Sprinkle cinnamon and sugar over top.
