Ingredients/Components
- finely cut rhubarb
- sugar - 1/2 c
- flour - 2 c
- vegetable oil - 1/2 c
- egg - 1 item
- sour milk - 1 c
- salt - 1/2 tsp
- soda - 1 tsp
- cinnamon - 1 tsp
- vanilla - 1 tsp
- butter
- coconut - 1 c
- brown sugar - 2/3 c
- milk - 1/4 c
- nuts - 1 c
How to make rhubarb cake:
Topping:6 Tbsp. butter1 c. coconut2/3 c. brown sugar1/4 c. milk1 c. nuts Combine rhubarb with 1/2 cup sugar; set aside. Mix flour, sugar, oil, egg, sour milk, soda, cinnamon and vanilla. Add the rhubarb and sugar mixture. Stir until well blended. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 1 hour or until done.Combine the last 5 ingredients; cook 3 minutes. Pour topping over cake while warm.
