Ingredients/Components

  • finely cut rhubarb
  • sugar - 1/2 c
  • flour - 2 c
  • vegetable oil - 1/2 c
  • egg - 1 item
  • sour milk - 1 c
  • salt - 1/2 tsp
  • soda - 1 tsp
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • butter
  • coconut - 1 c
  • brown sugar - 2/3 c
  • milk - 1/4 c
  • nuts - 1 c

How to make rhubarb cake:

Topping:6 Tbsp. butter1 c. coconut2/3 c. brown sugar1/4 c. milk1 c. nuts Combine rhubarb with 1/2 cup sugar; set aside. Mix flour, sugar, oil, egg, sour milk, soda, cinnamon and vanilla. Add the rhubarb and sugar mixture. Stir until well blended. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 1 hour or until done.

Combine the last 5 ingredients; cook 3 minutes. Pour topping over cake while warm.
