Pumpkin stew
Ingredients/Components
- water - 2 qt
- paprika - 1 tsp
- oregano - 1 tsp
- bouillon cubes - 2 item
- big squat pumpkin, hollowed out sturdy - 1 item
- assorted beans 12 bean soup pkg - 1 lb
- cubed vegetables of your choice such as onion, carrot, celery, parsnips, potatoes, pumpkin, squash - 1 item
How to make pumpkin stew:
Soak beans overnight. Boil beans for 1 hour. Add vegetables and seasonings and boil for another hour. Add more water if necessary. Stir often. Transfer to hollowed out pumpkin on tray. Bake in a 400° oven for 30 to 40 minutes. Serve with bread or corn muffins. Great for Halloween Eve dinners.Recipe categories: Main dish, Pork, Stew.
