Red cabbage casserole
Ingredients/Components
- sugar - 1/4 c
- salt - 1 tsp
- vinegar - 1/4 c
- shortening - 1 Tbsp
- lemon juice - 1/4 c
- medium onion, chopped - 1 item
- shredded red cabbage - 8 c
- red currant jelly - 1/4 c
- to 2 medium apples, chopped - 1 item
How to make red cabbage casserole:
In heavy saucepan, melt shortening. Add cabbage, onion, lemon juice, vinegar, sugar and salt. Stir well. Cover and cook over medium heat for 10 to 15 minutes (until cabbage is crisp-tender). Add apples and cook 10 to 15 minutes more, until cabbage and apples are tender. Stir in jelly and put in serving dish. Garnish with lemon slices.Instead of lemon juice and vinegar, either 1/2 cup lemon juice or 1/2 cup vinegar can be used separately.
