How to make quick yeast bread:
Soften yeast in lukewarm water with 1 teaspoon sugar. Scald milk; stir in 1/3 cup sugar and salt. Cool until lukewarm. (Pour milk into mixing bowl and it will cool faster.) Put butter in warm milk pan to melt. When cool, combine milk mixture and yeast mixture; combine beaten eggs. Add about 4 cups of the flour and beat well until smooth. Add butter and beat smooth. Beat in enough flour to make smooth elastic, but not too stiff, dough. Place in a lightly greased bowl; turn dough over.Cover; let rise in a cozy 85° place until doubled in bulk (1 hour), then shape into rolls or 3 small loaves. Place in greased pans; cover and let rise again in warm place until doubled. Bake 15 to 20 minutes at 400°. (Makes 2 dozen cloverleaf rolls.) I usually start rolls at 8:30 a.m. to bake at noon.
