Quick jambalaya
Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- clove garlic, minced - 1 item
- can tomato sauce - 1 oz
- thinly sliced celery - 1/2 c
- medium onion, chopped - 1 item
- Creole seasoning - 2 tsp
- andouille or other smoked sausage, sliced - 1/4 lb
- whole boneless, skinless chicken breasts, cut into cubes - 2 item
- small green pepper, cut into strips - 1 item
- Minute premium long grain rice uncooked
- can Cajun-style tomatoes - 1 1/2
How to make quick jambalaya:
Heat oil in a large skillet on medium-high heat. Add sausage; cook and stir until lightly browned. Add chicken, onion, bell pepper, celery and garlic; cook and stir until chicken is cooked through. Stir in tomatoes, okra, tomato sauce and seasoning. Bring to a boil. Stir in rice. Cover. Remove from heat. Let stand 5 minutes or until liquid is absorbed.
