Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 6 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- ginger - 1 tsp
- canned pumpkin - 2/3 c
- softened butter - 4 tsp
- pecans - 1 c
- lemon juice - 1 tsp
- 10x sugar
- nutmeg and salt - 1/2 tsp
How to make pumpkin roll:
Filling:1 c. 10x sugar6 oz. cream cheese4 tsp. softened butter1/2 tsp. vanilla Beat eggs for 5 minutes on high speed. Add sugar; stir in pumpkin and lemon juice. Mix separately the flour, baking powder and spices. Fold into pumpkin mixture. Spread in a greased and floured (15 x 10-inch) pan. Top with nuts. Bake at 375° for 15 minutes. Turn out on a dish towel (not terry) which has been powdered with 10x sugar. Roll up cake and towel together and cool.Filling: Beat filling ingredients; unroll the roll. Spread the filling and re-roll. Chill and slice.
