Ingredients/Components

  • sugar - 3/4 c
  • cinnamon - 2 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • powdered sugar - 1 c
  • ginger - 3/4 tsp
  • canned pumpkin - 2/3 c
  • lemon juice - 1 tsp
  • salt optional - 1 item
  • chopped walnuts or pecans - 1 c

How to make pumpkin cake:

In food processor beat eggs on high for 3 minutes. Gradually add sugar, canned pumpkin and lemon juice.

Sift together flour, baking powder, cinnamon, nutmeg, ginger and salt. Pour dry mixture into pumpkin mix. Spread on greased and floured 15 x 1 x 10-inch cookie sheet pan. Top with chopped walnuts or pecans. Turn on towel with powdered sugar.

Add 1 cup powdered sugar, cream cheese, butter (room temperature) and vanilla. Mix all together. Spread on cake and roll up to cool. Serves 6.
