Pumpkin cake
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- powdered sugar - 1 c
- ginger - 3/4 tsp
- canned pumpkin - 2/3 c
- lemon juice - 1 tsp
- salt optional - 1 item
- chopped walnuts or pecans - 1 c
How to make pumpkin cake:
In food processor beat eggs on high for 3 minutes. Gradually add sugar, canned pumpkin and lemon juice.Sift together flour, baking powder, cinnamon, nutmeg, ginger and salt. Pour dry mixture into pumpkin mix. Spread on greased and floured 15 x 1 x 10-inch cookie sheet pan. Top with chopped walnuts or pecans. Turn on towel with powdered sugar.
Add 1 cup powdered sugar, cream cheese, butter (room temperature) and vanilla. Mix all together. Spread on cake and roll up to cool. Serves 6.
