Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- margarine - 1/4 c
- lemon juice - 1 tsp
- 10x sugar
How to make pumpkin roll:
Filling:1 c. 10x sugar8 oz. cream cheese1/4 c. margarine1/2 tsp. vanilla Beat eggs until thick and lemony. Add sugar gradually. Stir in pumpkin and lemon juice. Sift dry ingredients and add to pumpkin mixture and blend well. Spread in greased, floured jelly roll pan or grease pan, spread layer of waxed paper and grease and flour paper. Bake at 375° for 12 to 15 minutes. Turn cake onto towel sprinkled with 10x sugar. Roll warm cake with seam side down and allow to cool while preparing filling.Filling: Mix all ingredients until smooth. Unroll cake, spread filling, re-roll cake.
