Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- cinnamon - 2 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- salt - 1/2 tsp
- finely chopped nuts - 1 c
- powdered sugar
- pkg - 2 oz
- butter - 4 Tbsp
- vanilla - 1/2 tsp
How to make pumpkin cake roll:
Filling:1 c. powdered sugar2 (3 oz.) pkg. cream cheese4 Tbsp. butter1/2 tsp. vanilla Beat eggs on high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Sift and add all dry ingredients. Line jelly roll pan with waxed paper. Grease the waxed paper and sides of the pan. Spread the mixture in the pan. Top with nuts. Bake at 375° for about 15 minutes. Turn pan over onto powdered sugar dusted towel. Peel off waxed paper. Roll cake in towel and cool.Mix filling and spread onto the open cake and re-roll, then chill. Very good and easy to make.
