Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- salt - 1/4 tsp
- flour
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1/2 c
- firmly packed brown sugar - 1 c
- ginger - 1/2 tsp
- bananas - 1/2 c
- cooked pumpkin - 1 c
- nuts, chopped optional - 1 c
How to make pumpkin banana bread:
In a large mixer bowl combine pumpkin, bananas, sugar and oil; mix well. Beat in one egg at a time. In another bowl mix flour, baking powder, cinnamon, ginger and salt; sift together. Add to pumpkin mix and beat well. Stir in nuts. Pour into 2 greased loaf pans (7 1/2 x 3 1/2 x 2 1/4-inch). Bake in preheated 450° oven for 50 to 60 minutes. Cool 5 minutes in pan.
