Pumpkin spice muffins
Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 2 item
- salt - 1/2 tsp
- flour - 2 c
- nutmeg - 1/2 tsp
- baking powder - 1 Tbsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- ginger - 1/2 tsp
- raisins - 2/3 c
- hot water - 1/2 c
- cloves - 1/4 tsp
- fresh or canned pumpkin - 1 c
How to make pumpkin spice muffins:
Grease muffin tin for 12 muffins. Soak raisins in hot water for 15 minutes. In a large bowl, beat eggs with sugar, salt and spices. Gradually beat in pumpkin. Sift flour with baking powder and soda; gradually add to batter. Beat in the oil and raisins with liquid. Preheat oven to 400°. Ladle batter into tins, filling 2/3 full. Bake muffins for 20 to 30 minutes or until puffed and firm when tested. Serve warm with butter.Recipe categories: Breads, Quick breads, Muffins.
