Potato soup
Ingredients/Components
- salt - 2 tsp
- flour - 1 Tbsp
- butter - 3 Tbsp
- water - 3 c
- pepper - 1/4 tsp
- finely chopped onion - 1/2 c
- chicken bouillon cubes - 2 item
- finely chopped celery - 1/2 c
- diced raw potatoes - 3 c
- scalded milk - 2 c
- sour cream I sometimes add more - 1 c
How to make potato soup:
Cook potatoes, celery and onions in the 3 cups water until tender. Drain - save water - blend in blender - return to pot with water. Add milk, bouillon and butter. Mix sour cream with flour and add to soup mixture. Cook, stirring constantly until mixture thickens and bouillon cubes - dissolve. Stir in salt and pepper. (I cook a few extra finely diced potatoes to add to the blended soup to give it extra texture.) Serve topped with crumbled bacon, sliced green onion and finely shredded cheese.Recipe categories: Potato, Vegetables, Soups & stews.
