Ingredients/Components

  • evaporated milk - 1 c
  • water - 5 c
  • oleo - 1/3 c
  • pepper to taste - 1 item
  • parsley - 1 tsp
  • salt to taste - 1 item
  • chicken bouillon cubes - 7 item
  • chopped chives - 1 item
  • onions, sliced - 2 item
  • rib celery, chopped - 1 item
  • medium potatoes, peeled and sliced - 6 item
  • carrot, pared and sliced - 1 item

How to make potato soup:

Place the first 6 ingredients in enough of the water (1 to 1 1/2 cups) and bring to a boil. Reduce heat and simmer until the vegetables are tender. Remove from the heat and mash the vegetables. Add the remaining ingredients, all but milk. Return to heat and bring to a boil. Add the evaporated milk. Turn heat off. Serves 6.
