Ingredients/Components
- milk - 1 c
- butter or margarine - 2 Tbsp
- salt - 1 tsp
- light cream - 1 c
- white pepper - 1/8 tsp
- celery salt - 1/2 tsp
- diced and peeled potatoes - 2 c
- cold water or chicken broth - 2 c
- small yellow onion, peeled and minced - 1 item
- minced parsley, chives or dill - 1 Tbsp
How to make potato soup:
Stir-fry onion in butter in a heavy saucepan over moderate heat 5 minutes until limp; add potatoes, water, salt and celery salt. Cover and simmer 10 to 15 minutes until potatoes are nearly tender. Add milk, cream and pepper; simmer, uncovered, stirring occasionally 3 to 5 minutes until potatoes are done. Sprinkle with parsley and serve.Contains about 190 calories per serving if made with water, 210 if made with broth.
