Potato-leek soup
Ingredients/Components
- salt - 1 tsp
- can evaporated milk - 1 item
- olive oil - 2 tsp
- water or chicken broth - 3 c
- diced potatoes - 2 c
- diced onions - 1 c
- chopped leeks - 2 c
How to make potato-leek soup:
In a large pot saute onions in oil until clear. Add water, salt, potatoes and leeks. Cover and simmer for 25 minutes or until potatoes are soft. Puree in blender and return to pot. Add milk. Heat for 5 minutes until hot. Serve with croutons and fresh ground black pepper.How to handle fresh leeks: Cut off hard, dark green stems and roots at end. Throw them away. Separate remaining parts. Wash thoroughly in cold water, they are usually dirty.
