Ingredients/Components

  • flour - 2 Tbsp
  • water - 1/4 c
  • margarine - 2 Tbsp
  • can chicken broth - 1 1/2
  • salt and pepper to taste - 1 item
  • can evaporated milk - 1 oz
  • chopped parsley - 1 Tbsp
  • cans water - 2 item
  • stalks celery, chopped small - 2 item
  • leeks, chopped - 1 c

How to make potato-leek soup:

Melt margarine. Saut?© leeks and celery. Pour in chicken broth and water. Add potatoes and parsley. Simmer 1 hour. Add milk and simmer 15 minutes. Blend flour into 1/4 cup water and stir into soup. Simmer another 15 minutes, stirring frequently.

Notice that I never put a high heat under this. It takes longer to cook, but it does not stick on the bottom.
