Ingredients/Components

  • butter - 3 Tbsp
  • sliced leek onions - 3 c
  • flour - 3 Tbsp
  • hot water or 6 c - 2 qt
  • whipped cream or sour cream - 1/2 c
  • salt - 1 Tbsp
  • pepper to taste - 1 item
  • peeled roughly chopped potatoes - 4 c
  • parsley - 2 Tbsp

How to make potato leek soup:

Melt butter; add onions and leeks. Cover and simmer for 5 minutes. Blend in flour 2 minutes; gradually add 1 cup hot water. Blend thoroughly. Add vegetables and rest of water. Stir and add salt and pepper. Cook 40 minutes. Now, add 2 cups milk and sour cream before serving.
