Baked onion soup
Ingredients/Components
- sugar - 1/4 tsp
- salt - 1 tsp
- flour - 3 Tbsp
- butter - 3 Tbsp
- oil - 1 Tbsp
- dry white wine - 1/2 c
- pepper to taste - 1 item
- thinly sliced onions - 5 c
- small cans beef broth - 3 item
How to make baked onion soup:
Saute onions in butter and oil in covered saucepan for 5 minutes. Add sugar and salt; cook over moderate heat until onions are transparent. Add flour and stir for 3 minutes. Raise heat and add broth and wine. Season and simmer, partly covered, for 45 minutes.To Bake: Put soup in individual bowls. Put stale or toasted bread on top. Dot with butter and cover with Gruyere cheese. Bake at 375° for 20 minutes. Broil 3 to 5 minutes until browned.
