Ingredients/Components

  • head iceberg or romaine lettuce - 1 item
  • tomatoes, cut into wedges - 3 item
  • cucumber, thinly sliced - 1 item
  • radishes, thinly sliced - 5 item
  • green onions, sliced - 4 item
  • green pepper, thinly sliced - 1/2 item
  • parsley, chopped - 3 Tbsp
  • Greek style marinated green olives - 10 item
  • Feta cheese, cubed - 1/2 c
  • Oil-Vinegar Dressing recipe to follow - 1 item
  • Add tomatoes, cucumbers, radishes, onions, green pepper, parsley and olives
  • red wine vinegar - 1/4 c
  • large cloves garlic, mashed - 2 item
  • each: salt and pepper - 1/4 tsp

How to make greek salad:

Break lettuce into a large bowl. Add tomatoes, cucumbers, radishes, onions, green pepper, parsley and olives. Toss lightly. Add Feta cheese; sprinkle with Oil-Vinegar Dressing. Toss lightly again. Makes 6 servings.Oil-Vinegar Dressing:1/4 c. olive oil1/4 c. red wine vinegar2 large cloves garlic, mashed1/4 tsp. each: salt and pepper Combine oil, vinegar, garlic, salt and pepper; blend well. Makes 1/2 cup.
