Ingredients/Components

  • vanilla - 1 tsp
  • butter - 2 3
  • peanut butter
  • boxes confectioners sugar - 2 item
  • medium potato, boiled - 1 item

How to make potato candy:

Mash potato very fine. Add butter; use wooden spoon. Add confectioners sugar until stiff enough to roll. Roll out like pie crust, but in rectangular shape. Roll 1/3 of candy mixture at a time (easier to handle). Roll on waxed paper or plastic wrap to 1/4-inch thickness. Spread with peanut butter. Roll up like cinnamon rolls. Wrap tightly in plastic wrap. Put in refrigerator. Slice when ready to eat.
