Poinsettia cookies
Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 3 c
- confectioners sugar - 2 c
- shredded coconut - 1 c
- butter or margarine, softened - 1 c
- butterscotch chips - 1 c
- rum extract substitute almond extract - 1/2 tsp
- candied red cherries, cut in wedges - 1/2 c
How to make poinsettia cookies:
Cream sugar and butter; add eggs and extracts. Sift together salt and flour; stir into butter mixture. Stir in coconut and 3/4 cup of butterscotch chips. Chill dough until firm. Roll in 1-inch balls. Place on cookie sheet. Flatten with glass dipped in granulated sugar. Place a butterscotch chip in the center of each cookie. Place cherry wedges in a circle to resemble a poinsettia.
