Ingredients/Components

  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 3 c
  • confectioners sugar - 2 c
  • shredded coconut - 1 c
  • butter or margarine, softened - 1 c
  • butterscotch chips - 1 c
  • rum extract substitute almond extract - 1/2 tsp
  • candied red cherries, cut in wedges - 1/2 c

How to make poinsettia cookies:

Cream sugar and butter; add eggs and extracts. Sift together salt and flour; stir into butter mixture. Stir in coconut and 3/4 cup of butterscotch chips. Chill dough until firm. Roll in 1-inch balls. Place on cookie sheet. Flatten with glass dipped in granulated sugar. Place a butterscotch chip in the center of each cookie. Place cherry wedges in a circle to resemble a poinsettia. Bake at 375° for 10 to 12 minutes. Makes 5 dozen.
